Mornings aren’t what they used to be since becoming a mom: leisurely rolling out of bed, quietly sipping herbal tea, and looking up the morning yoga class I’d like to attend has become a thing of the past.
Now my mornings consist of me waking up to my 2 yr old yelling, “BABAAA!” from his crib, wiping the sleep from my eyes as I stumble into the kitchen to get him a bottle of coconut water, feeding the cat, and trying to whip up something quick and easy to eat. Muffins have become a staple in our home. The batter takes 5 min to throw together and they are done in 30 min. This supplies me with breakfast and snacks for the next couple of days.
I created a muffin recipe for each diet plan I offer because they are quick, delicious, and most important healing.
These lemon blueberry muffins are part of our Yin Deficiency diet plan. They can help diminish and heal symptoms such as:
- adrenal fatigue
- hot flashes & night sweats
- feeling exhausted & deeply drained
- graying hair (prematurely)
- dry & aging skin

What makes these healing for Yin Deficiency are the ingredients I have chosen to use.
Teff flour, black chia seeds, blueberries, almond milk, organic eggs and butter are all wonderful for nourishing yin. Foods that are dark-black in colour, small amounts of animal products, and foods rich in moistening oils can replenish and refuel the body.
Think of yin deficiency as a machine that has been running non-stop without any rest or maintenance.
If you were to look inside the machine it would be hot, low in fluids, in desperate need of an oil change, and on the fritz. This is how you can liken a person with yin deficiency: overworked, go-go-go, exhausted, restless, dry, and feels hot in the evening or has hot flashes.
By giving foods that are high in minerals (like teff flour), darkly pigmented (like blueberries and blackberries), that are rich in healthy oils (like chia seeds and nuts), and with a little bit of animal products (organic butter, eggs, fish, pork) you can help to restore balance and ultimately feel better.
There are more foods that support Yin Deficiency, but for now we’re going to focus on our muffin recipe.
1 ½ cups teff flour (I use Bob’s Red Mill Whole Grain Teff Flour)
½ cup tapioca starch
2 tsp baking powder
½ tsp baking soda
2 tbsp chia seeds, ground (preferably black chia) *grind in coffee grinder or Vitamix
2 organic eggs, beaten
2 bananas, mashed
1 cup almond milk (can use soy or rice milk)
1/3 cup melted organic butter (or virgin coconut oil)
½ cup coconut palm sugar (or organic sugar)
zest of one lemon (be sure to grate the very top layer of the lemon, not the bitter white part underneath)
1 cup blueberries
Preheat Oven 350 degrees
Mixing Bowl 1:
Combine the dry ingredients in one bowl.
Mixing Bowl 2:
Beat the eggs and bananas together, add in the milk, melted butter, sugar, and lemon
Slowly add in the dry ingredients and stir until combined. Fold in the blueberries.
Pour batter into a greased or lined muffin pan, you will yield 12 muffins from this recipe.
Bake 350 F for 30 minutes or until a knife is inserted in the center and comes out clean.
Let cool and enjoy.
